Spicy Deconstructed Tuna Salad Boats

Don't let the deconstructed term scare you. This fun recipe takes about 5 minutes and is packed with protein and healthy fats. Enjoy hours of feel good energy!


Serves 1 to 2 people


INGREDIENTS


1 medium-sized cucumber

2 tablespoons spreadable cheese or herb spread, room temperature e.g. cream cheese

1 four (4)-ounce can tuna in extra virgin olive oil

1 small shallot, thinly sliced

2 olives, thinly sliced

2 teaspoons freshly chopped chives or other favorite herb

1 teaspoon fresh lemon zest

Freshly ground pepper

1 - 2 teaspoons hot sauce, or to taste.


DIRECTIONS

  1. Halve the cucumber lengthwise. Using a small spoon, scoop out just enough seeds to create a hollow down the middle.

  2. Spread 1 tablespoon softened cheese or herb spread in each hollowed middle.

  3. Remove the tuna from the can and flake. You can make it as chunky or as fine as you like! Divide the tuna in half and fill each of the cucumbers.

  4. Top the tuna with the shallot, olives, and chives.

  5. Season the top generously with black pepper, hot sauce, and fresh lemon zest

  6. Serve slightly chilled.
